We cook over live fire, from the heat of the oven to the old language of the grill, where flame does more than cook: it gathers, transforms and sets the night’s rhythm. At the bar we follow the same rule: precise, instinctive, honest. Between light, sound and smoke, everything connects. The table is set.

Coyote welcomes New Year’s Eve with an intimate desert cocktail party in the dunes of Baja California Sur.
The night glows with fire pits and a signature cocktail bar by Dany Monroy from 20:00 to 22:00, inspired by smoke, spices, and desert legends.
A roaming hors d’oeuvres bar by chef Paul Salazar invites guests to graze and share bold flavors that nod to Native American traditions and the Pacific coast.
Paradans curates the soundscape, guiding the evening from desert beats to a midnight toast under a sky full of stars.
